wellness wednesday- just eat real food- paleo snacks

… i was scrolling through my facebook newsfeed today, when i came across this post:

Meet Jess

Our  Store Manager!

Here’s her story…

I found lululemon…While in search of a job where I could say “I love what I do!” I happened to be visiting the Hyde Park lululemon store in Cincinnati. I asked the team if they were hiring and in a week I was packing my bags and moving from Chicago to Cincinnati to be a part of the new store opening of the Kenwood Mall. It really was the law of attraction at work, because of my love of yoga and running!

Favorite way to sweat…a run in Forest Park with friends followed by an awesome yoga class!

A goal I’m working on…I travel to Africa to volunteer with the Africa Yoga Aid Project in 2014.

Favorite thing about the Central West End…It’s hard to pick just 1, but I love the diversity of this community, whether it is the food, the people or the local businesses.

I have a #dreamjob because…I get to work with fun and inspiring people everyday in a community I love. Empowering others to live their best life through yoga and setting big, hairy, audacious goals has quickly become my passion.

I can’t believe I get to call this “work”!

*so proud of my sister, jess– she is an inspiration of living life to the fullest-
passionate, hard working, and healthy –
best wishes, love
*all of you located in st. louis- – be sure to check it out in the central west end
(one adorable area!!)

speaking of jess-

she recommended these fantastic paleo bars-
i made them tonight
can’t wait to try them in the morning for breakfast-
so easy … only took about 10 minutes to make:

Primal Nut Bars
1 cup of slivered almonds
1 cup of pecans
½ cup of nut flour
½ cup of unsweetened dried coconut
½ cup almond butter
½ cup of coconut oil
¼ cup of honey
2 tsp of pure vanilla
½ teaspoon of salt
1 cup of dried fruit, like cranberries
Preheat the primal cooking fire (oven) to 350 degrees and toast the nuts until golden brown stirring occasionally. Watch them carefully, they’ll go from golden to black fast! Once they are toasted nicely, toss them in the stone grinder, (the food processor or blender) and give them a few pulses till they are a coarse meal and stir into the nut flour in a medium bowl and add the coconut and mix well.
In a microwave safe bowl, warm up the coconut oil and almond butter for about 20 seconds, in the radiant zapper, (microwave) and stir them together well. Add the honey, vanilla, and salt then mix till all creamy and you are starting to drool. Fold the nut mix into the honey mix then add the fruit. Pat into an 8 x 8 baking dish and stick in the ice cave (fridge) for 1 hour or more till nice and solid. Cut into squares and try not to grunt when eating. Keep in the ice cave to store.

*my focus this week was to keep researching the overall concepts of the lifestyle- with a focus on coming up with snack ideas – here are a few that i found both on the web and then i went to barnes and nobel yesterday and picked up these three GORGEOUS and helpful cookbooks to use as resources:
